MAKES 2 LOAVES
Ingredients:
• 6 egg whites
• ¼ cup oil
• 2 cups sugar
• 1 teaspoon vanilla
• 2 cups shredded zucchini
• 1 cup applesauce or 2 mashed bananas
• 2½ cups all-purpose flour
• ½ cup cocoa
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• ¼ teaspoon baking powder
Preparation:
Mix all ingredients in a large bowl. Pour the batter into 2 greased and floured loaf pans. Bake at 350° for 1 hour.
