Serves 4
Ingredients:
1/2 cucumber
12 and 1/2oz (400g) tomatoes
1/2 bunch spring onions
3tbsp (45ml) lemon juice
6tbsp (90ml) olive oil
Salt and freshly ground pepper as desired
A few basil leaves
Preparation:
1. Wash the tomatoes cut into wedges.
2. Wash and trim the spring onions and cut into rings.
3. Wash the cucumber and cut into pieces. Dice the sheep's cheese.
4. Make a dressing from the lemon juice, oil, salt and pepper, check the seasoning and add to the salad ingredients, Mix well, Serve garnished with basil.
